By default, Exchange Online room resource calendars can be booked out to 180 days beyond the current date.
If you would like to extend this date, please submit a 4Help ticket. Reference the name of the room resource calendar you would like to extend and the number of days you would like to extend it out to. Please have it forwarded to Collaborative Computing Solutions (CCS).
